I love pumpkin. Pumpkin anything except maybe pumpkin relish or pumpkin flavored hot dogs. I have pumpkin pop tarts, pumpkin waffles, pumpkin spiced chai, pumpkin oatmeal, plus a couple of cans of pumpkin.
Last Saturday I made 3 desserts for a church picnic and I admit I made 2 of the 3 for selfish reasons. Pumpkin pie, pumpkin cake, and stuffed Nutella cookies. I made the pumpkin pie because I just wanted a slice to appease my pumpkin fix. And the cake I also wanted to try, hoping to just get a slice and not come home with a whole cake staring at me every time I enter the kitchen. And the cookies are always popular. I ended up leaving the picnic early to pick up my medicine and never tried the cake.
The next couple of days, I got several complements on how good the cake was. What? I wasn't expecting to hear that. So, of course I have to make it again to number one, satisfy my curiosity, and two, it's a pumpkin Charlie Brown.
I also had a bunch of frosting left over so you know....
I made it today and it is a very good recipe, I did change it a little bit. I added coconut oil instead of veg oil, and added 2 teaspoons of pumpkin pie spice to the cake. Oh and half cream and half milk. Yes I did. It's pumpkin time, how many do I have left? I dunno. I'm going to milk it until I'm orange or until next month. Which ever comes first.
